Avocado, Brie and Bacon Skewers

Ingredients:

2 Avocados
Juice of One Lemon
16 Slices of Stip Bacon
200g Kapiti Kotuku
16 Skewers



Method:

Cut the avocado in half and remove the skin and stone. Slice each half into 4.

Place in a bowl with the lemon juice.

Cut the Kapiti Kotuku into 8 wedges and then slice each wedge down the middle.

Wrap and piece of bacon around a wedge of Kapiti Kotuku and avocado. Secure with the Skewer.

Place skewers on a baking tray and grill gently for 5-6 minutes each side.

Serve immediately.

Great with Sweet Chilli Sauce
