Feijoa Cake

Ingredients:

75g Mainland Butter (softened)
1 cup of Feijoa's blended
2 eggs
¾ cup sugar
1 tsp Vanilla Essence
½ cup Anchor Blue
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp mixed spice
½ tsp salt



Method:

In a food processor, combine feijoas, eggs, sugar, Mainland Butter, vanilla essence, Anchor Blue Top and blend until smooth.

Pour into a mixing bowl.

Sift in the dry ingredients and then fold into the wet ingredients.

Bake for 40 minutes at 200°C or until a skewer comes out clean.

Have hot with fresh whipped cream or Tip Top Vanilla ice cream.
