NEW Kapiti Dark Chocolate Chilli & Raspberry Ice Cream

Kapiti New Flavour_imageKapiti Ice Cream enjoys unusually high prestige among New Zealand chefs, as seen by the fact that it is one of very few commercial ice creams commonly specified by brand on dessert menus.

Partly this is about the quality of the ice cream itself, and partly the wide range of flavours - currently 21 in all - some limited editions.

It has been 18 months since Kapiti sparked some interest with a new flavour, and the latest - Dark Chocolate Chilli & Raspberry - is bound to become a good point conversation with your customers.

That said, the concept of chilli with chocolate is not quite as radical as it may sound: chilli flavoured chocolate has been produced by artisan chocolatiers such as Schoc for many years, and even mainstream chocolate companies such as Lindt now have their own version.

Besides, the heat in Kapiti's new product is more a hint than a full-on blast, stemming from the well-known artisan brand of chilli sauce, Kaitaia Fire.

Raspberry, which is nearly as famous as orange as a complementary flavour to chocolate, is to be seen in the ripples of frozen coulis throughout.

A scoop might be paired with white chocolate mousse, vanilla crème brulee, cheesecake or a tart filled with crème patisserie and fresh raspberries. It could also form part of a trio of ice creams served with fresh raspberry coulis. A summer desert menu might well be written around it, but if not, it's great for the specials board.

Nor does it necessarily need to be confined to desserts: try mixing it into fraps or use it to enliven a milkshake.
