Storage

Refrigerate at 2-4oC. White cheeses need to be kept in breathable wrap to allow the mould to breathe and remain “alive.”

Helpful tips
|
Cheese is best served at room temperature. For the ultimate flavour, remove the cheese from the refrigerator at least one hour before serving to allow the texture and aroma to develop.
White moulded cheese tends to match well with Chardonnay, particularly buttery Chardonnay with creamy cheese. Also try Chardonnay blends and Semillon. The flavoured varieties may suggest a different match altogether, such as Sauvignon Blanc with Peppered Brie.
