Refrigerate at 2-40C. B lue cheese is a living product. It will continue to mature even when refrigerated, which means it will be slightly more piquant if left for any length of time in the refrigerator.
Always store blue cheese separately from other cheeses to avoid tainting other more delicate flavours. Keep in breathable wrap or perforated foil to allow the blue to breathe and remain “alive.”

Cheese is best served at room temperature to allow it to breathe and develop a full texture and aroma. If you have forgotten to remove the cheese from the fridge in time, give it 5 -10 seconds in the microwave to soften and develop.
Blue cheese is essential on any cheeseboard. When first cut or opened, blue cheese can have a greenish or slightly yellow tinge. The normal blue will appear within a few minutes following exposure to the air.
